Layered Matcha Blackcurrant Smoothie

This layered matcha blackcurrant smoothie is perfect for a filling summer drink that could also serve as a healthy lunch on the go. It's packed with vitamins and antioxidants, plus we added oats to make it more nourishing.

Me and my sister created this colorful smoothie recipe for a Sunday lunch last week. When we first started brainstorming how to use matcha powder in our smoothie, I really wanted to add blackcurrants to it, because they are my favourite berries. However, we realised this would make the smoothie lose it's bright green color. Somehow this layered smoothie was born, and thankfully, it also turned out to be super yummy!

The purple layer is blended with banana, blackcurrants, coconut milk and freshly squeezed lime juice.

Green layer is a mixture of banana, quick oats, coconut milk, lime juice, matcha powder and 1 teaspoon of supergreens mix (optional).

Together they formed a surprisingly refreshing and tasty combination, so if you can't be bothered to make two layers, you could potentially throw these ingredients into a blender all at once too. However, I personally think it would be more fun to experience different flavours as you drink your layered smoothie. (Blackcurrant, matcha and later both mixed together). Not to mention, the layered version is more pleasing aesthetically.

Lastly, we believe that adding lime was also a great decision, because as it turns out, smoothies taste better with some extra flavouring too!

Layered Matcha Blackcurrant Smoothie Recipe

Blackcurrant smoothie layer:
1 1/2 chopped bananas
1 cup blackcurrants
1/2 cup coconut milk
1/2 lime

Matcha smoothie layer:
1 1/2 chopped bananas
1/2 cup quick oats
1/2 cup coconut milk
1/2 lime
2 tsp matcha powder
1 tsp Supergreens Mix (optional)

Tip: Use frozen fruits for summer to make the smoothies cold and refreshing.

To serve, fill a glass halfway with the blackcurrant smoothie. Carefully top it with the matcha smoothie. Serve immediately. Recipe serves 2.

    2. Although you might want to exclude a few things like lime in that case. :D
