Matcha Mango Popsicles

Refreshing and healthy Matcha Mango Popsicles are THE BEST treat for a hot day! They are made with a bunch of my favourite ingredients: matcha powder, mango, coconut milk and fresh raspberries! Who knew mango goes so well it matcha???

Matcha Mango Popsicles

It has been a summer filled with matcha over here and, as it turns out, there really are so many ways to use powedered green tea! I'm sure I could think of several more to continue what seems to be a series of matcha recipes already.

By the way, if you haven't seen my previous recipes yet, feel free to check out my Matcha Nice Cream and Layered Matcha-Blackcurrant Smoothie, which were both insanely tasty!

However, I really wanted to give matcha popsicles a go too, so I decided to order a popsicle mold and some wooden popsicle sticks to use.


I knew I wanted to include real pureed fruit in my popsicles, but I have to admit, my first thought was to use bananas again. That would have been a bit boring, though, as they have been the main ingredient in all my recipes so far!

It was my daily-smoothie-drinking sister who then suggested I use mango instead (a yellow fruit that goes well with coconut) and I'm so glad she did! Mango, coconut and matcha taste heavenly together, however adding raspberries is what really made this recipe extra special, so do not leave them out if possible! :)

Matcha Mango Popsicles

Matcha, Mango and Coconut Popsicles Recipe

Vegan, gluten-free, no refined sugar. | Serves 6 popsicles.

Ingredients:
200g frozen mango cubes
200ml 100% coconut milk
2 tsp matcha powder
2 tbsp agave syrup
raspberries

Instructions
  1. Soak wooden popsicle sticks in water for a few hours or overnight.
  2. Blend mango cubes with coconut milk, matcha powder and agave syrup.
  3. Pour into popsicle mold and place 3-5 rasperries into each mold.
  4. Add sticks and freeze for at least 4-5 hours.

  3. Omg Lona, this recipe sounds as tasty as easy! The only thing I need to find is agave syrup - and the molds of course - then I can give it a try. Thanks for the idea, I would have never thought of mixing mango with matcha otherwise!
